I made my first totally vegan salad, and before anybody gets excited, no, I did not suddenly become a woodland fairy who survives on leaves and positive thoughts. I was hungry. There is a difference.
I put lettuce in a bowl and immediately felt like I needed a plan. Lettuce alone is not a meal. Lettuce alone is decoration. Lettuce is what food sits on when it wants to look important.
So I added tomatoes, cucumbers, carrots, and some avocado because I am classy and I had something to prove. Then I stared at the bowl like it had personally offended me. Where was the cheese? Where was the chicken? Where was the little crouton army waiting to save the day?
Not there. That is where.
I made a simple dressing with oil, lemon juice, seasoning, and a little something sweet. I am not giving you exact measurements because I was shaking things in the bowl like a woman on a cooking show who had forgotten the cameras were rolling. Somehow, it worked. Mostly.
The first bite was crunchy. Very crunchy. This salad had a lot to say. The cucumber was fresh, the avocado was doing its creamy little job, and the lemon gave everything a kick. I missed the cheese for approximately seven seconds, then I remembered I was trying something new and decided to stop being dramatic. That lasted another three seconds.
Was it the best salad I have ever eaten? No. Was it a sad bowl of leaves? Also no. It was colorful, filling enough, and completely vegan, which made me feel like I had accomplished something bigger than lunch. Mo looked at it, said “yuck,” and went back to being three.
I may make it again. Next time, I am adding more avocado and less attitude. If we friends, you can call me Neeka.
