Hello my fellow earthlings! After breakfast had me questioning tofu, I decided I needed to try something that did not involve pretending a block of white soybean was an egg. No disrespect to tofu, but we are still getting acquainted.
I had some vegetables left from my pasta, a can of chickpeas, and a sweet potato sitting on the counter looking like it had been waiting for its moment. So I decided to make a bowl. Not a fancy bowl with a sauce that needs its own phone number. Just roasted sweet potato, chickpeas, vegetables, and rice.
This was the first time I cooked without feeling like I was taking an exam. I cut up the sweet potato, tossed it with oil and seasoning, and put it in the oven. The chickpeas went in a pan with garlic and a little paprika. I was seasoning things based on smell and common sense instead of reading instructions every three seconds. Look at me, growing.
Mo was in the kitchen asking me if the sweet potatoes were cookies, which is a fair question if you are three and everything orange looks like it might be dessert. I told him no, and he said okay like he had received some disappointing news from management. Children will humble you in a way no documentary ever could.
When everything was done, I put it all in a bowl and added a little avocado. It looked good. Not internet good, where the food is sitting in perfect little sections and nobody has touched the kitchen. It looked like something I could actually eat on a regular day.
And it tasted good too. The chickpeas had some flavor. The sweet potato was soft and sweet. The vegetables were doing their part. I sat there chewing and realized I was not missing meat in that moment. I was just eating dinner, and dinner was not fighting me.
Now, before anybody gets excited, I am not claiming I have mastered this whole vegan thing. I still have questions, and I still look at certain ingredients like they are written in ancient code. But I am beginning to understand that I do not need a perfect plan every time I walk into the kitchen. Sometimes I just need food, seasoning, and enough patience to let the oven do its job.
